If you add Chicken or a bag of mixed seafood from Chong's you can turn the RB&R in to Gumbo!

Red beans and Rice, single batch.
If you want to double it substitute stoplight peppers(3 peppers in a bag), add more celery, more carrots and double the seasoning.
What you will need
Big a** pot with lid or a plate to put on top.
1 large yellow onion
1 lb small red bean's, Not kidney bean. Soak over night!
2 bell peppers
3 stalks celery
1 can Rotel with mild green chile's
3 Bay leafs
2 packages of smoked sausages, andouille or kielbasa. Definitely do Not get them from Aldi's, Blah! You will have so much grease.
-1 can of pealed, chopped tomatoes.
1 Tbsp Hot sauce
1/2 tsp Thyme
1/8 tsp cyan pepper
-4 cloves Garlic
Wash, rinse, and sort beans. Let soak over night.
Cut up all of the Vegetable's, mix with seasoning and beans. Add water, just enough to cover it. Set on high to boil. Let cook at a simmer for about an hour, then take your ladle and smash some of the beans. About 5-6 crushes, more if you like. This will cause it to thicken.
Cut the sausage up, about 1/4 - 1/2 in slices, cut in half. They should look like little half moons. Add to pot, let cook 15-20 minuets of until the meat is done. Cooking time might be more though, depending, I think I sometimes let it cook for an hour and a half.
To make the rice to go along with it just remember, 1cup water too 1/2 cup rice. I like to use Jasmin rice.
CARIBBEAN BREAD PUDDING
I switch out the Rum for Jack Daniels Whiskey.I find that using coconut cream instead of coconut milk gives it a better flavor, you can get this at Chong's. $.85 a can. If you use Cinnamon raisin bread you wont have to put in the spices, though I would still add the raisin's it calls for.

WHISKEY SAUCE:
1/4 lb. unsalted butter
1 c. sugar
1/4 c. boiling water
1 egg
1/4 c. whiskey
In top of double boiler, cream butter and sugar together. Beat in boiling water. Cook, stirring constantly, over hot water until sugar is dissolved. Beat egg and pour into mixture slowly, stirring continually so that egg doesn't curdle. Stir for 2-3 minutes. Let cool. Add whiskey. Sauce must be served warm. Makes 2 cups.
I have Two, 1' tall by 5"? wide, they are cream colored candles and come other slighty used ones.

I made this last night and omg is it good! This has potential to be a crock pot dish, feel free to mess with it.
1lb Chicken, cut in to 1-2in pieces
1/2 half can of Coconut milk, shake the can well before opening
1 cup uncooked Brown rice
1/2 cup uncooked Wild rice
1 Carrot grated** Optional
1 Small Onion Chopped
1-1 1/2 Tbl Garlic (I like alot of garlic)
1 1/2 - 2 Tbl Sugar (Possibly more)
1- 1 1/2 tsp Salt (Possibly more)
**To Taste**
Turmeric
Cayenne pepper
Start cooking the Brown and Wild rice in separate pots for 55 min.
Mix together Coconut milk, Turmeric, Cayenne pepper, Sugar and Salt in a separate bowl, set aside.
After 30 minuets, saute the Onion and Garlic. After they start to brown, put in the Chicken. Once the Chicken is cooked pour the Coconut Mix and grated Carrot on top, mix and let simmer until the rice is done.
Once rice is done, mix Brown and Wild rice, Serve!
